How to use it
Sets aside the current topic to switch to something else more important to the speaker. Colloquial.
- 「それはそうと」 = that's that aside, but... The speaker deliberately SETS ASIDE the old topic: 「その話はまた今度。それはそうと、来週の件はどうなった?」.
- Different from 「ところで」 (a purely neutral topic change) in that 「それはそうと」 implies "that other matter isn't as important".
- Because it is slightly impolite, avoid using it with superiors; use 「ところで」 or 「話は変わりますが」 there instead.
Examples

その件はまた後で。それはそうと、資料はもうできた?
Let us handle that later. By the way, is the document ready?
Keep in mind
- Colloquial, not used with superiors.
- There must be a preceding sentence for 「それ」 to point back to.

-

「それはそうと」 needs an ONGOING topic to set aside; right at a first greeting there is nothing yet to set aside, so it cannot be used here.
